Ponies will die after a long and fulfilling life (unless you take them out of water) A sea pony will not die if you do not get it to water as soon as you inject it. However, once you drop the sea pony, you must get it to water as soon as possible as the timer script has been set off and the pony will die if it does not get to water soon.
